As well as using more seeds in my bread, I am adding flakes and bran to the bread for a greater depth of flavour. This also results in a custom flour mix made to your own tastes.
To save time and make bread making more Mise en place a pre made flake/bran mix has to be the way to go.
The mix that is in nearly all my loaves, is as follows
Oat Bran 50g Top layer
Barley flakes 50g
Wheatgerm 50g
Spelt flakes 75g
Wheat bran 50g
Rolled oats 100g Bottom layer
Obviously you can make any mix of your favourite bran/flakes and try a ratio of your own.
Making your own bran/flake mix is a lot cheaper than buying it already made and can be tailored to your taste. It will result in your own bread mixture allowing you to make 'one of a kind' loaves of bread.
The layer of different bran/flakes looks great but give it a good shake before you use it to mix the contents up properly.
