I am using more and more seeds in my bread, so every time I make bread I open 6 different packets of seeds. The taste and texture they give to a loaf are fantastic.
To save time and make bread making more Mise en place a pre made seed mix has to be the way to go.
The mix that is in nearly all my loaves, is as follows
Poppy seeds 50g Top layer
Sesame seeds dehulled 100g
Millet grain 100g
Golden Linseed 200g
Sunflower seeds 200g
Pumpkin seeds 200g Bottom layer
Obviously you can make any mix of your favourite seeds and try a ratio of your own.
Making your own seed mix is a lot cheaper than buying it already made and can be tailored to your taste. If you buy in bulk like I do, it will make using the mix easier and stop the opening and resealing of many different bags.
The layer of different seeds looks great but give it a good shake before you use it to mix the seeds up properly.
