While on my holiday this year in California I bought a loaf of bread that was great. The bread in question was Daves Killer Bread 21 Seed and grain.
As I am hopelessly obsessed with making bread. I took photos of the packet and looked up the ingredients.
After a small order from Healthy Supplies who I use for all my seeds for seeded bread, did I say small 13 kilos of seeds and grains, which was not cheap! But the ingredients should help make at least 40 loaves of bread, so it will be good value.
So armed with the ingredients, well most of them I couldn't find a few or decided the cost was getting scary. I had to try to formulate a recipe from the ingredients.
THE OFFICIAL INGREDIENTS:
Organic whole wheat (organic whole wheat flour, organic cracked whole wheat), water, 21 Whole Grains and Seeds mix (organic whole flax seeds, organic sunflower seeds, organic ground whole flax seeds, organic un-hulled brown sesame seeds, organic triticale, organic pumpkin seeds, organic rolled barley, organic rolled oats, organic rolled rye, organic un-hulled black sesame seeds, organic millet, organic rolled spelt, organic blue cornmeal, organic brown rice flour, organic yellow cornmeal, organic amaranth flour, organic rolled KAMUT® Khorasan wheat, organic quinoa, organic buckwheat flour, organic sorghum flour, organic poppy seeds), organic dried cane syrup (sugar), organic wheat gluten, organic oat fiber, organic molasses, sea salt, organic cultured whole wheat, yeast, organic vinegar.
So as I've not done this before I decided to break it down into approximate measurements
organic whole wheat flour, 700 gm
organic cracked whole wheat, 200 gm
water 650 ml
21 Whole Grains and Seeds mix - consisting of :-
organic whole flax seeds 30 gm used sesame instead
organic sunflower seeds 30 gm
organic ground whole flax seeds didn't get any
organic un-hulled brown sesame seeds 30 gm
organic triticale Could not get any of this
organic pumpkin seeds 30 gm
organic rolled barley 20 gm
organic rolled oats 20 gm
organic rolled rye 20 gm rye flour instead
organic un-hulled black sesame seeds don't have any
organic millet 20 gm
organic rolled spelt 20 gm
organic blue cornmeal did not get any of this
organic brown rice flour 20 gm
organic yellow cornmeal 20 gm
organic amaranth flour I have the grains, so need to grind it in the pestle and mortar
organic rolled KAMUT® Khorasan wheat 20 gm as above needed to grind it
organic quinoa 20 gm
organic buckwheat flour 20 gm
organic sorghum flour 15 gm
organic poppy seeds) 12 gm
organic dried cane syrup (sugar) 12 gm used white sugar
organic wheat gluten don't want to add extra gluten so did not get

organic vinegar 1 tsp I used white vinegar
I have never noticed vinegar in bread recipes but having looked it up, it is said to help the yeast and creates a bigger rise in the bread. it can also help in rye breads to reduce the gumminess of rye doughs.
So my final recipe to make this loaf was :-
whole wheat flour, 700 gm
cracked whole wheat, 200 gm
water 670 gm/ml
sesame seeds, sunflower seeds, un-hulled brown sesame seeds, pumpkin seeds - 30 gm of each
rolled barley, rolled oats, rye flour, millet, rolled spelt, brown rice flour, yellow cornmeal, amaranth grain*, Khorasan grain*, quinoa, buckwheat flour - 20 gm of each
sorghum flour 15 gm
organic poppy seeds, white sugar, oat bran, black treacle, Maldon sea salt - 12 gm of each
wheat germ 10 gm
Doves instant yeast 8 gm
White vinegar 1 tsp
The ingredients with a * should have been a flour or rolled versions, so were bought in error. Stupidly I thought I could grind them in a pestle and mortar, no chance they are very hard versions of what I should have bought.
The dough came together well and rose as expected. It created a very dense loaf probably due to the lack of the gluten addition and 90% being whole wheat. Still it tasted really good and I will be making it again soon but with a large addition of high gluten flour, to make it a lighter loaf.
